Method:
Wash and hull the strawberries. Put all the strawberries, except two, in a blender. Add vanilla, lemon juice, and sugar, and mix into a puree. Pour into a champagne flute half-way (more or less to taste). Top with Mateus Sparkling Brut, and stir gently. Slide the remaining strawberries onto edges of the glasses.

Serve Mateus Sparkling Brut Rosé chilled to 6-8°C.
